What chai actually is

Chai simply means tea. What most people in the UK mean by it is masala chai — black tea brewed with a mix of whole spices, traditionally simmered with milk and sugar on the stove. There's no single fixed recipe; every household blend leans a different way, some heavier on cardamom, others on ginger or pepper.

Our version uses whole pieces rather than a ground powder or a sprayed-on flavouring. You can see the cardamom pods and cinnamon bark in the pouch, which means the cup builds slowly rather than arriving all at once.

The spices, one at a time

Cardamom

Green pods, cracked not ground — bright, resinous, faintly citrus. The spice that makes chai taste like chai.

Cinnamon

Rolled bark rather than powder. Sweet and woody, and it rounds off the sharper edges of the blend.

Ginger

Dried root cut into pieces. Warm and peppery, with a slow heat that builds across the cup.

Clove

Used sparingly. Deep, almost medicinal-sweet, and it lingers longest on the finish.

How to brew it

Straight in the cup

One heaped teaspoon per cup. Water just off the boil, around 95°C. Steep four to five minutes, strain, and add milk after if you want it.

Simmered on the hob

Two heaped teaspoons in 200ml water. Bring to a gentle simmer for three minutes, add 100ml milk, bring back up without boiling over, then strain into the cup.

Chai questions

Does chai tea contain caffeine?

Traditional chai is built on a black tea base, so yes — expect a similar level to a strong cup of breakfast tea. Spice-only blends without a tea base have none.

What is the difference between chai and a chai latte?

Chai is the brewed spiced tea itself. A chai latte is that brew extended with steamed milk, usually sweetened. Same pouch, different pour.

How long should I steep chai?

Four to five minutes in water just off the boil for a hot cup. For a milk chai, simmer the leaf and spice in water for three minutes, add milk and bring it back up before straining.

Is loose leaf chai better than tea bags?

Whole spice pieces need room to open up. Loose leaf gives cardamom pods and cinnamon bark space to release, which a compressed bag restricts.
